Hoisin-Glazed Meatloaf Sandwiches
Ingredients
- 12 thick slices white sandwich bread
- ¾ cup hoisin sauce
- ½ cup unseasoned rice vinegar
- 1 1" piece ginger
- 1 clove garlic
- nonstick vegetable-oil spray
- 2 cups day-old crustless white bread

- ½ cup chicken stock or low-sodium chicken broth
- 4 slices bacon
- 1 1/3 cups scallions
- 3 celery stalks
- 1 4" piece ginger
- 7 cloves garlic
- 1 pound ground beef
- 1 pound ground pork
- 3 whole star anise
- 2 teaspoons kosher salt
- 2 large eggs
- 1 teaspoon freshly ground black pepper
- 1 cup each carrots, cucumbers, and radishes
- ¾ cup unseasoned rice vinegar
- 1 pinch kosher salt
- 1 pinch sugar
- 4 teaspoons vegetable oil
- 1 cup fresh cilantro
- Hoisin sauce is available at many supermarkets and at Asian markets.
- An 8 ½x4 ½x3" loaf pan
Bring all ingredients to a boil in a medium saucepan; reduce heat to low and cook, stirring often, until sauce thickens to a glaze, 8-10 minutes. Preheat oven to 375°F.
