Ingredients

  • ¼ teaspoon salt
  • 1 tablespoon molasses
  • ½ teaspoon salt
  • 2/3 cup evaporated low-fat milk
  • 2 teaspoons vegetable oil
  • 2 garlic cloves, crushed
  • 1 tablespoon dark rum
  • + 9 more ingredients
    • 1 tablespoon fresh lime juice
    • 8 skinned, boned chicken thighs (about 1 1/2 pounds)
    • 2 tablespoons chopped peeled fresh ginger
    • Chopped fresh parsley (optional)
    • ½ teaspoon dried thyme
    • ¼ cup chopped green onions
    • 1 tablespoon chopped jalapeño pepper
    • 1 teaspoon ground allspice
    • 3 cups (1/2-inch) cubed peeled baking potato (about 1 pound)

Combine first 10 ingredients in a blender, and process until smooth. Combine green onion mixture and chicken in a large zip-top plastic bag; seal and marinate in refrigerator 24 hours, turning bag occasionally.
