Mid-Atlantic Mushroom and Chestnut Stuffing

Ingredients

  • 1 ½ 1-pound loaves old-fashioned white bread, cut into ½-inch cubes (about 16 cups)
  • ½ cup (1 stick) butter
  • 3 large onions, chopped
  • 1 pound mushrooms, sliced
  • 5 celery stalks, chopped
  • ¼ cup chopped fresh thyme or 2 teaspoons dried
  • 3 tablespoons chopped fresh rosemary or 2 teaspoons dried
  • + 2 more ingredients
    • ½ teaspoon ground nutmeg
    • 1 ½ cups (about) canned low-salt chicken broth
