Mushroom Chicken Rollups

  • porcini mushroom juice
  • 1 cup chicken stock
  • ¼ cup white wine
  • salt, pepper

    • ¼ cup dried porcini mushrooms (1/2 pound of crimini mushrooms would be a good substitute if porcini not available)
    • ½ pound white mushrooms
    • 2 shallots
    • 3 of garlic
    • 2 tbsps. olive oil
    • Mushroom Sauce
    • 3 tbsps. olive oil
    • 3 tbsps. chopped parsley
    • ¼ cup of Pecorino Romano Cheese
    • 3 of garlic
    • ½ cup bread crumbs
    • 4 tbsps. Dijon Mustard
    • fresh spinach
    • 4 of Proscuitto
    • 4 ounce of Motzarella
    • 4 tbsps. pesto sauce
    • 4 chicken cutlets
