Oven Sweet-and-Sour Chicken with Red Quinoa

Ingredients

  • 1 large green bell pepper, cored, seeded and cut into 1-inch pieces
  • 6 scallions, trimmed and cut into 2-inch pieces
  • 1 cup red quinoa
  • 1 14 ½ounce can reducedsodium chicken broth
  • 1/8 teaspoon black pepper
  • 3 tablespoons apricot preserves
  • 2 tablespoons ketchup
  • + 9 more ingredients
    • 1 tablespoon reduced-sodium soy sauce
    • 1 tablespoon rice vinegar
    • ½ teaspoon ground ginger
    • 1 pound boneless, skinless chicken breasts, cut into 2-inch pieces
    • 1 large red sweet pepper, cored, seeded and cut into 1-inch pieces
    • 1 large carrot, peeled and cut into thick coins
    • 1/8 teaspoon salt
    • ½ pound Brussels sprouts, trimmed and shredded
    • 2 tablespoons sliced almonds
