Ingredients

  • 12 skinless, boneless chicken thighs
  • 1 teaspoon salt, divided
  • Chicken:
  • 6 garlic cloves, crushed
  • 1 ½ cups basil leaves
  • ¾ teaspoon black pepper, divided
  • 2 tablespoons fat-free, less-sodium chicken broth
  • + 5 more ingredients
    • 2 tablespoons grated Parmesan cheese
    • 2 teaspoons extravirgin olive oil
    • Pesto:
    • Cooking spray
    • 1 ½ cups chopped fresh flat-leaf parsley

Preheat oven to 375°. To prepare pesto, combine oil and garlic in a microwave-safe bowl. Microwave at HIGH 40 seconds.
