Ingredients

  • 1 (14 1/2-ounce) can fat-free, less-sodium chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 garlic cloves, minced
  • 2 cups water
  • 1 cup polenta
  • ½ cup (2 ounces) shredded fontina or Parmesan cheese
  • + 2 more ingredients
    • Olive oil-flavored cooking spray
    • 3 cups chopped spinach (about 3 1/2 ounces)

Heat a medium nonstick skillet coated with cooking spray over medium-high heat. Add garlic; sauté 1 minute. Add spinach; cook 1 minute or until spinach wilts. Remove from heat.
