Polenta with Fontina and Spinach

Ingredients
- Olive oil-flavored cooking spray
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 3 cups chopped spinach (about 3 1/2 ounces)
- 1 (14 1/2-ounce) can fat-free, less-sodium chicken broth
- 1 cup polenta
- 2 garlic cloves, minced
- + 2 more ingredients

- ½ cup (2 ounces) shredded fontina or Parmesan cheese
Heat a medium nonstick skillet coated with cooking spray over medium-high heat. Add garlic; sauté 1 minute. Add spinach; cook 1 minute or until spinach wilts. Remove from heat.
