Portuguese Chicken Salad

Ingredients

  • chicken
  • 2 whole chicken breasts, halved, skinned, boned and cut in 1-inch cubes
  • 1 egg white, slightly beaten
  • 4 c bite size assorted salad greens
  • ¾ c cornflake crumbs
  • 1 c thinly sliced cabbage
  • ½ c grated Parmesan cheese
  • + 14 more ingredients
    • 1 bay leaf, finely crumbled
    • ½ medium red bell pepper, cut in thin strips
    • 1 t paprika
    • ½ t salt
    • ¼ t garlic powder
    • ¼ t pepper
    • Piri Piri Vinaigrette
    • ¼ t crushed red pepper
    • 1 T olive oil
    • ½ c tomato juice
    • 3 T red wine vinegar
    • 2 T fresh chopped cilantro
    • 1 T chopped onion
    • ½ t salt

In shallow dish, mix together cornflake crumbs, cheese, bay leaf, paprika, salt, garlic powder and pepper. In separate shallow bowl, place egg white; add chicken, stirring to coat.
