    • ¼ teaspoon ground black pepper
    • 1 cup celery
    • 1/3 cup fresh Italian parsley
    • 1 sweet Italian sausage
    • Fresh Italian parsley sprigs
    • Freshly grated Parmesan cheese
    • ¾ cup carrot
    • ¾ cup red onion
    • 1 large garlic clove
    • ¼ cup extra-virgin olive oil
    • 8 tablespoons butter
    • ½ teaspoon salt

Bring large pot of salted water to boil. Add potatoes and sausage; boil until sausage is cooked through, about 10 minutes. Transfer sausage to plate.
