Potato Casserole with Caramelized Onions
Ingredients
- ¼ cup olive oil
- 6 large sweet onions, diced
- 4 pounds baking potatoes, peeled and cubed
- 1 cup sour cream
- 4 large eggs, lightly beaten
- 4 cups chicken broth
- 1 cup whipping cream
- + 3 more ingredients

- ¾ cup butter, divided
- 1 tablespoon sugar
Melt 1/4 cup butter in a large skillet over medium heat. Add olive oil, onions, and sugar. Cook, stirring often, 25 to 30 minutes or until onions are deep golden brown.
