Ingredients

  • Filling:
  • 2 (4-ounce) skinless, boneless chicken breast halves
  • Dough:
  • ¾ teaspoon salt
  • 2 ¼ cups masa harina
  • 1 cup (4 ounces) shredded Monterey Jack cheese with jalapeño peppers, divided
  • 2 cups nopalitos (about 6 chopped nopales - cactus paddles)
  • + 7 more ingredients
    • ¾ cup finely chopped onion
    • Cooking spray
    • ¼ teaspoon black pepper
    • 1 cup water
    • 2 garlic cloves, minced
    • ½ teaspoon ground cumin
    • ½ teaspoon salt

Preheat oven to 375°. To prepare filling, cook nopalitos in boiling water 10 minutes. Drain. Sprinkle the chicken with 1/2 teaspoon salt, cumin, and pepper.
