Spiced Chicken Broth with Chive Flans

Ingredients

  • 1 cup half-and-half
  • ¼ cup chives plus more for garnish
  • 8 whole black peppercorns
  • 16 green cardamom pods
  • 1 (3-inch) piece peeled ginger
  • 1 Turkish or 1/2 California bay leaf
  • 6 parsley stems
  • + 7 more ingredients
    • 1 medium onion
    • 2 carrots
    • 5 pounds chicken wings
    • 2 celery ribs
    • 1 flexible silicone "hemisphere" mold with 24 rounded cups
    • 4 quarts water
    • 2 large eggs

Bring all broth ingredients to a boil with 2 teaspoons salt in an 8-to 10-quarts heavy pot and skim foam. Gently simmer, uncovered, skimming occasionally, 4 hours.
