Spiced Chicken Broth with Chive Flans
Ingredients
- 1 cup half-and-half
- ¼ cup chives plus more for garnish
- 8 whole black peppercorns
- 16 green cardamom pods
- 1 (3-inch) piece peeled ginger
- 1 Turkish or 1/2 California bay leaf
- 6 parsley stems

- 2 carrots
- 5 pounds chicken wings
- 2 celery ribs
- 1 flexible silicone "hemisphere" mold with 24 rounded cups
- 4 quarts water
- 2 large eggs
Bring all broth ingredients to a boil with 2 teaspoons salt in an 8-to 10-quarts heavy pot and skim foam. Gently simmer, uncovered, skimming occasionally, 4 hours.
