Spicy Pecan-Cornbread Stuffing
Ingredients
- 3 to 4 large eggs, lightly beaten
- 1 large onion, diced
- 2 tablespoons butter or margarine
- 2 tablespoons vegetable oil
- 2 teaspoons dried sage
- 1 1/3 cups all-purpose flour
- 1 1/3 cups yellow cornmeal

- 1 ½ cups Spicy Pecans
- ½ teaspoon salt
- 3 celery ribs, diced
- 1 teaspoon garlic powder
- ¾ teaspoon baking soda
- ½ to 2 cups chicken broth
- ¾ cup diced mushrooms
- 1 red bell pepper, chopped
- 2 large eggs
- 10 bacon slices
- 2 teaspoons dried thyme
Cook bacon in a 9-inch cast-iron skillet until crisp; remove bacon, and drain on paper towels, reserving 2 tablespoons drippings in skillet. Keep skillet warm. Crumble bacon, and set aside.
