Tempura Sardines with Tonnatto Sauce

Ingredients

  • 2 tablespoons minced fresh oregano
  • ½ cup ½-inch sliced large zucchini
  • ½ cup ½-inch sliced squash
  • 1 pound canned good tuna fish, drained
  • 2 cups heavy cream
  • 4 cups milk

    • 1 cup all-purpose flour
    • 2 sticks butter
    • 3 tablespoons minced garlic
    • 1 tablespoon freshly ground black pepper
    • 1 tablespoon salt
    • 4 cups chicken stock
    • 1 tablespoon cornstarch
    • 12 fresh sardines, cleaned
    • 8 cups vegetable oil
    • ½ cup soda water
    • 1 teaspoon rice wine vinegar
    • 1 egg
    • 1 teaspoon salt
    • 1 tablespoon baking powder
    • 1 cup all-purpose flour
