  • 2 cups basmati rice, rinsed and drained
  • 1-½ Tbs. unsalted butter
  • Freshly ground black pepper
  • 1 tsp. kosher salt
  • 3 oz. (1 cup) sliced almonds
  • 1-½ Tbs. peanut or vegetable oil
  • 2 cups water
  • + 2 more ingredients
    • 2 cups homemade or low-salt chicken broth
    • 2 large shallots, minced (¾ cup)

Heat the oven to 350°F. On a rimmed baking sheet, toast the almonds until golden brown, 8 to 10 minutes, shaking the pan occasionally and checking for even browning. Set aside.
