  • 2 teaspoons dried oregano
  • 1 tablespoon minced seeded jalapeño pepper
  • Cooking spray

    • 2 tablespoons all-purpose flour
    • 3 ears shucked corn
    • ½ cup sliced green onions
    • ¼ teaspoon salt
    • Sauce:
    • 3 cups water
    • 1/3 cup minced fresh cilantro
    • ¾ cup (3 ounces) shredded reduced-fat extra-sharp cheddar cheese, divided
    • Shredded leaf lettuce (optional)
    • 12 (6-inch) corn tortillas, cut in half
    • ¼ teaspoon ground red pepper
    • Remaining ingredients:
    • 1 teaspoon ground cumin
    • ½ cup low-fat sour cream
    • 1 (8-ounce) can tomato sauce
    • 1 teaspoon chili powder
    • 2 large garlic cloves, sliced
    • 3 cups chopped tomato (about 3 medium tomatoes)
