Tropical Chicken with Quinoa Salad

Ingredients

  • 2 c diced cooked sweet potato
  • 2 c rinsed black beans
  • 2 c diced fresh pineapple
  • 3 thinly sliced green onions
  • pinch cayenne
  • salt to taste
  • 2 t grated fresh ginger

    • 4 t sesame oil
    • 4 T white wine vinegar
    • 4 T chopped fresh mint
    • ½ c chopped fresh cilantro
    • ¾ c orange juice
    • 2 c chicken broth
    • 1 c Quinoa
    • Salad:
    • thin lime slices
    • ¼ c chopped toasted Macademia nuts
    • ½ c toasted coconut
    • Garnish:
    • ¼ c chopped Macademia nuts
    • 1 T minced fresh tarragon
    • 1 c sweetened shredded coconut
    • 1 c Panko bread crumbs
    • Breading:
    • 1 T minced fresh tarragon
    • 1 t each lemon and lime zest
    • 1 T lemongrass herb blend (Gourmet Garden)
    • 1 T mashed garlic
    • 1 T grated ginger
    • juice of 1 lime
    • 16 oz sour cream
    • Marinade:
    • 6 6 ounce boneless skinless chicken breasts
