Ingredients

  • 4 celery ribs
  • ½ cup fresh flat-leaf parsley
  • 6 cups country-style bread
  • 1 ½ cups wild rice
  • 1 cup chicken broth
  • ½ pound sliced bacon
  • 2 onions

Preheat oven to 325°F. Rinse rice in a sieve under cold water, then cover with cold water by 2 inches in a 4-quart pot. Simmer, covered, until tender, 50 minutes to 1 hour.
