Ingredients

  • 1 ¾ cups canned tomatoes, drained and chopped
  • 2 ounces smoked ham, cut into 1/4-inch dice
  • 1 tablespoon olive oil
  • 4 chicken thighs
  • 1 red bell pepper, chopped
  • 1 tablespoon tomato paste
  • 2 teaspoons salt

    • 1 cup rice, preferably long-grain
    • ½ teaspoon fresh-ground black pepper
    • 2 tablespoons chopped fresh parsley
    • 4 chicken drumsticks
    • 1 green bell pepper, chopped
