  • 8 chicken drumsticks (about 2 pounds)
  • 1/8 teaspoon plus 1 pinch cayenne pepper
  • 1 teaspoon freshly ground black pepper
  • ¼ teaspoon plus 1 pinch dried thyme
  • 2 ½ teaspoons kosher salt, plus more as needed
