Brined Fried Chicken
Ingredients
- 4 ½ teaspoons paprika
- 7 ½ teaspoons kosher salt
- 1 teaspoon coriander seeds
- Brine (recipe follows)
- ½ cup sugar
- Oil for frying
- 3 cups buttermilk

- 3 cups flour
- 2 chickens, 3 pounds each, cut into 8 pieces each
- 1 bay leaf
- ¼ cup salt
- 4 ½ teaspoons cayenne pepper
- 1 teaspoon black peppercorns
- 3 teaspoons freshly ground black pepper
1. Put the chicken in a glass baking dish and pour the brine over the chicken. Cover with plastic wrap and refrigerate for 12-24 hours. 2.
