Ingredients

  • 3 cups buttermilk
  • 4 ½ teaspoons paprika
  • Oil for frying
  • 3 cups flour
  • 1 teaspoon coriander seeds
  • 1 bay leaf
  • Brine (recipe follows)
  • + 7 more ingredients
    • 1 teaspoon black peppercorns
    • ½ cup sugar
    • 7 ½ teaspoons kosher salt
    • 4 ½ teaspoons cayenne pepper
    • 3 teaspoons freshly ground black pepper
    • ¼ cup salt
    • 2 chickens, 3 pounds each, cut into 8 pieces each
