Cajun Fried Rice

Ingredients

  • 1 cup cubed cooked pork
  • ¼ teaspoon pepper
  • ½ teaspoon ground cumin
  • 1 ½ teaspoons salt
  • 1 medium tomato, diced
  • 1 (14.5 ounce) can chicken broth
  • 2 ¼ cups water

    • 1 celery rib, thinly sliced
    • 1 small onion, chopped
    • 1 medium green pepper, diced
    • 3 tablespoons canola oil
    • 2 cups uncooked long grain rice

1. In a large skillet, saute rice in oil until lightly browned. Add the green pepper, onion and celery; saute for 2-3 minutes. Stir in the water, broth, tomato, salt if desired, cumin and pepper.
