Chargrilled steak with a brandy mushroom cream sauce, chips and honeyed carrots

Ingredients

  • 2 tbsp chopped fresh coriander
  • 2 tbsp honey
  • 6 baby carrots
  • 25g/1oz butter
  • 2 garlic cloves, skin on and squashed
  • 1 sprig fresh thyme
  • 1 sprig fresh rosemary

    • salt and freshly ground black pepper
    • 1 potato, cut into wedges
    • 3 tbsp olive oil
    • 100ml/3½fl oz double cream
    • 100ml/3½fl oz chicken stock
    • 2 tbsp red wine
    • 2 tbsp brandy
    • 55g/2oz button mushrooms, sliced
    • 1 garlic clove, crushed to a paste in a mortar and pestle
    • ½ onion, sliced
    • 2 tbsp olive oil
    • salt and freshly ground black pepper
    • 85g/3oz sirloin steak

1. For the steak and sauce, season the meat with salt and freshly ground black pepper and rub in the oil.
