Chicken and Wild Rice Casserole

Ingredients

• 2 tablespoons dry sherry
• 2 tablespoons heavy cream or half-and-half
• 1 tablespoon fresh thyme leaves, minced
• 2 ½ cups low-sodium chicken broth
• ¹/₃ cup dry white wine
• ¾ cup uncooked Arborio rice
• 1 medium carrot, peeled, medium dice

  • 6 chicken drumsticks with skin
  • 6 chicken thighs with skin
  • ¹/₃ cup uncooked wild rice
  • ½ cup boiling water
  • ½ ounce dried porcini mushrooms
