Chicken Livers with Caramelized Onions and Madeira

Ingredients

  • ½ cup Madeira
  • 1 ¼ pounds chicken livers, each cut in half
  • 3 onions, sliced thin (about 4 cups)
  • ¼ teaspoon fresh-ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons cooking oil
  • 1 hard-cooked egg, chopped
  • + 1 more ingredients
    • ¾ teaspoon salt

1. In a large frying pan, heat 2 tablespoons of the oil over moderate heat. Add the onions, 1/2 teaspoon of the salt, and 1/8 teaspoon of the pepper.
