- ½ cup yellow cornmeal

- 2 (14.5 oz.) cans diced tomatoes, undrained
- 1 (14 oz.) can chicken broth
- 1 cup chopped onion
- 1 pound skinned & boned chicken thighs, cut into 1/2 inch pieces
- 4 tablespoon vegetable oil, divided
- 1 teaspoon kosher salt
- 1 teaspoon cinnamon
- 2 teaspoon dried oregano
- 1 ounce unsweetened baking chocolate
