Chicken Tacos Santa Fe

Ingredients

• 2 tomatoes,seeded,chopped
• ½ teaspoon salt
• 1 tablespoon olive oil
• ¼ cup chopped cilantro
• 1 chipotle pepper in adobo sauce
• 1 garlic,peeled
• ½ cup sour cream

  • 2 cup shredded lettuce
  • 1 cup shredded monterey jack cheese
  • 6 indian fry bread rounds or pita bread
  • 2 cup canned pinto beans,drained and rinced
  • 1 cup canned fire roasted tomatoes,chopped
  • 1 teaspoon black pepper
  • 1 teaspoon garlic salt
  • 1 tablespoon cumin
  • 3 tablespoon chili powder
  • 2 garlic cloves, minced
  • ½ cup chopped yellow onion
  • 1 lb.ground chicken
  • 2 tablespoon canola oil

Heat oil in a large skillet,add ground chicken and cook 5 minutes over a medium-hi heat.Add chopped onion and garlic cook 3 minutes.Add spices,fire roasted tomatoes and beans.Simmer for 15 minutes over medium heat.
