Chicken tagine with pomegranate

Ingredients

  • 50 g sultanas
  • 1 handful coriander, roughly chopped
  • 250 g couscous
  • ½ tbsp vegetable bouillon
  • 2 400g cans chopped tomatoes
  • 1 tbsp honey
  • 8 garlic cloves, peeled and finely chopped
  • + 9 more ingredients
    • 2 onions, peeled and roughly chopped
    • 1 tbsp sunflower oil
    • 50 g dried apricots, finely sliced
    • 10 chicken thighs, skinned, boned and cut in half
    • 2 tsp paprika
    • ½ tsp cayenne pepper
    • 1 tsp turmeric
    • 1 tsp freshly ground black pepper
    • 1 tsp ground ginger

1. Mix all the spices together in a small bowl. 2. Place the chicken pieces in a large bowl, add half the spice mixture and toss until the chicken pieces are thoroughly coated. 3.
