Chicken Tandoori with Green Beans

Ingredients

  • 2 tablespoon soy sauce
  • 1 inch piece ginger minced
  • 3 garlic minced
  • 2 tablespoon water
  • 2 tablespoon vegetable oil
  • 2 pound green beans
  • Fragrant Green Beans:

    • 1 cup thinly sliced onion
    • 1 cup cilantro leaves
    • 24 lime wedges
    • Garnish:
    • ½ teaspoon ground turmeric
    • 1 teaspoon cumin seeds grind by hand
    • 1 teaspoon paprika
    • 2 teaspoon salt
    • 1 tablespoon ground cayenne pepper
    • 1 ½ cup cilantro leaves chopped
    • 1 cup mint leaves torn
    • 6 serrano or Thai bird chilies minced
    • 4 inch piece of ginger minced
    • 8 garlic cloves minced
    • ¼ cup vegetable oil
    • juice from 3 lemons
    • 1 cup plain yogurt
    • Marinade:
    • 12 boneless, skinless chicken thighs fat trimmed

Chicken: Place chicken into a large glass or ceramic baking dish. Place all marinade ingredients into a bowl and whisk to blend well. Pour marinade over chicken and cover with plastic wrap.
