Chicken Tequila Mama

Ingredients

  • ¼ teaspoon cayenne
  • ¾ teaspoon salt, or to taste
  • ¼ cup olive oil
  • 1 tablespoon chopped fresh cilantro
  • 1 ½ teaspoon fresh lime juice
  • 1 ½ teaspoon ground corriander seeds
  • 1 tablespoon ground cumin

    • 2 tablespoon chili powder
    • 1 clove garlic, minced
    • ¼ cup finely chopped sweet yellow onion ( such as maui, vidalia)
    • Chili paste:
    • fresh sprigs of cilantro
    • 4 roma tomatoes, cut crosswise into 16 slices
    • Garnish:
    • 8 thin slices red onion
    • 1 ½ ounce mild goat cheese, crumbled
    • 2 tablespoon finely chopped red bell pepper
    • 2 tablespoon finely chopped orange bell pepper
    • 4 cup loosely packed mixed greens
    • 2 teaspoon fresh lemon juice
    • 2 firm ripe avocados
    • ¼ cup water
    • 1 cup rinsed drained black beans
    • 1/3 cup chili paste ( recipe follows)
    • 1 ½ pound boneless skinless chicken breast
    • 2 ( 6 inch) corn tortillas ( cut into 1/4 inch wide strips)
    • 4 ( 8 inch ) Tomato flavored flour tortillas ( or plain)
    • ¼ cup fresh corn kernels
    • 1 tablespoon plus 1 cup vegetable oil
    • 2 tablespoon chopped cilantro
    • 2 tablespoon olive oil
    • 2 tablespoon fresh lime juice
    • 2 teaspoon Dijon mustard
    • 2 teaspoon red wine vinegar
    • 1 clove garlic, minced
    • 1 tablespoon Tequila
    • 3 roma tomatoes, halved
    • 3 fresh tomatillos
    • For Dressing:
