Cornmeal-Crusted Chicken with Goat-Cheese and Sausage Stuffing

Ingredients

  • 4 boneless, skinless chicken breasts (about 1 1/3 pounds in all)
  • ½ pound mild Italian sausage, casings removed, meat crumbled and cooked
  • ¼ teaspoon cayenne
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon water
  • ½ teaspoon salt
  • 3 tablespoons cooking oil
  • + 4 more ingredients
    • 5 ½ ounces goat cheese, crumbled
    • 1 egg
    • ¼ teaspoon fresh-ground black pepper
    • ¾ cup cornmeal
