Ingredients

  • 1 quart buttermilk
  • 1 fryer chicken, about 4 pounds, cut up into pieces (ask your butcher to do this)
  • 1 cup sorghum flour
  • 1 cup rice flour
  • 2 tablespoons cracked black pepper
  • 4 cups canola oil
  • ¼ cup milk
  • + 3 more ingredients
    • 3 cups gluten-free bread crumbs
    • 2 tablespoons kosher salt
    • 4 eggs

Soaking the chicken. Using a large bowl, soak all the chicken pieces in the buttermilk. Let them marinate overnight. The next day, remove the chicken pieces from the buttermilk.
