Fried Chicken Kansas City Style
Ingredients
- 2 cup hot whole milk
- 4 tablespoon shortening
- 2 tablespoon butter
- 1 teaspoon salt
- 2/3 cup flour
- kosher salt and freshly ground black pepper, to taste
- 2 ½ to 3 pound broiler chicken, cut into 8 pieces, backbone removed, at room temperature
Wash chicken pieces and pat dry with paper towel. Season generously with kosher salt. Season flour by stirring in a little salt and pepper.
