Fried Chicken Kansas City Style


  • 2 cup hot whole milk
  • 4 tablespoon shortening
  • 2 tablespoon butter
  • 1 teaspoon salt
  • 2/3 cup flour
  • kosher salt and freshly ground black pepper, to taste
  • 2 ½ to 3 pound broiler chicken, cut into 8 pieces, backbone removed, at room temperature

Wash chicken pieces and pat dry with paper towel. Season generously with kosher salt. Season flour by stirring in a little salt and pepper.
