Indian-Spiced Chicken and Spinach

Ingredients

  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 4 boneless, skinless chicken breasts (about 1 1/3 pounds in all), cut into 3 pieces each
  • 1 cinnamon stick
  • 2 tablespoons cooking oil
  • 2 jalapeño peppers, seeds and ribs removed, minced
  • 3 cloves garlic, chopped
  • + 9 more ingredients
    • ½ cup heavy cream
    • 1 ½ teaspoons salt
    • 1 tablespoon chopped fresh ginger
    • ½ teaspoon turmeric
    • ½ teaspoon paprika
    • 1 ½ cups water
    • 2 10- ounces packages frozen chopped spinach, thawed
    • 1 onion, chopped
    • ½ cup canned crushed tomatoes, drained

1. In a large frying pan, heat the oil over moderately low heat. Add the onion and cook until starting to soften, about 3 minutes.
