Ingredients

  • ½ teaspoon fresh-ground black pepper
  • 3 scallions including green tops, chopped
  • 1 teaspoon grated nutmeg
  • 1 tablespoon ground allspice
  • ¼ teaspoon vinegar
  • 1 ¼ teaspoons salt
  • 2 tablespoons brown sugar

    • ¼ cup cooking oil
    • 2 cloves garlic, chopped
    • 1 tablespoon dried thyme
    • 4 whole chicken legs
    • 1 teaspoon cayenne

1. In a food processor or blender, puree all the ingredients except the chicken legs. Put the chicken in a large roasting pan and coat with the pureed mixture.   • 1178515JerkMaster Sounds yummy- Try to find Jamaican allspice if you can. Most allspice in the US is from Mexico / honduras. The JAmaican soil and climate makes their allspice taste much sharper. It's almost a completely different spice. Also best if cooked like the Jamaicans do - over Pimento Wood(allspice wood). If you've been to Jamaica then you know- Pimento wood is what gives jerk its authentic taste. Irie Mon
