Pan Chicken with Jasmine Rice


  • 1 whole chicken, cooked, skinned, boned, chopped
  • ½ c finely chopped onion
  • 1 c soft jasmine rice, cooked with no salt according to package directions
  • ¼ c anaheim peppers
  • 2 T low sodium soy sauce
  • 4 T fresh lemon juice, divided
  • 1 T fish sauce
  • + 4 more ingredients
    • ½ t cinnamon
    • 2 clove garlic, minced
    • 1/3 c low sodium chicken broth, warm
    • 1 T canola oil
