Ingredients

  • 1/3 cup shredded carrot
  • 1 ½ cups couscous
  • About ¼ tsp. salt
  • ½ teaspoon saffron threads
  • 1 tablespoon plus 1/2 tbsp. butter, divided
  • 1 ½ cups reduced-sodium chicken broth
  • Freshly ground black pepper
  • + 1 more ingredients
    • ¼ cup toasted almonds, coarsely chopped

1. In a medium saucepan, bring broth, 1 tbsp. butter, the saffron, and 1/4 tsp. salt to a boil over high heat. Stir in couscous. Remove from heat, cover tightly, and let stand 10 minutes. 2.
