Ingredients

  • About 3 tablespoons butter
  • 1 pound thin-skinned potatoes, peeled and cut into 3/4-inch cubes
  • About 2 tablespoons minced parsley
  • 1 cup fat-skimmed chicken broth
  • 1 tablespoon Dijon mustard
  • Salt
  • 1 to 2 tablespoons drained capers
  • + 5 more ingredients
    • 8 ounces dried salt cod (see notes)
    • ½ teaspoon fresh thyme leaves
    • ¼ teaspoon fresh-ground pepper
    • ½ cup whipping cream
    • 1 onion (8 oz.), peeled and chopped

1. Rinse salt cod well under cool running water.
