  • ½ cup homemade turkey, chicken, or vegetable broth, or canned reduced-sodium chicken or vegetable broth
  • ½ cup crumbled Cotija cheese
  • ½ tsp. ground cumin
  • Kosher salt
  • 2 ancho chiles
  • 4 Tbs. olive oil
  • ½ yellow onion, sliced
  • + 7 more ingredients
    • 1 tsp. fresh lime juice
    • 12 6-inch corn tortillas
    • 1 tsp. sugar, plus more if needed
    • 3 large cloves garlic, smashed
    • 12 dried New Mexico chiles
    • ½ cup sour cream
    • 2 Tbs. olive oil, lard, or rendered chicken fat

Break open the dried chiles, discard the stems, and shake out the seeds. Depending on how brittle the chiles are, you can use your hands or use kitchen scissors.
