Stuffed Sweet Mini-Peppers

Ingredients

  • 1 onion (about 6 oz.), peeled and diced
  • About 1 cup fat-skimmed chicken broth or vegetable broth
  • ¼ cup pine nuts
  • ½ teaspoon dried thyme
  • 1 dried bay leaf (3 to 4 in. long)
  • Salt
  • ½ cup long-grain white rice
  • + 2 more ingredients
    • About 3 tablespoons olive oil
    • 12 to 15 sweet mini-peppers (each 3 to 4 in. long; red, yellow, or orange), halved lengthwise and seeded
