Sweet Potato Bacon and Onion Soup


  • 750 g sweet potatoes
  • 8 slices rindless bacon
  • 2 onions, finely chopped
  • 1 tablespoon extra virgin olive oil
  • 2 bay leaves
  • 1 ¼ liters chicken stock
  • ½ teaspoon freshly grated nutmeg
