Thai Tamarind Chicken Stir Fry

Ingredients

  • 2 Tbsp. sugar
  • 2+½ Tbsp. fish sauce
  • 1/3 cup chicken stock
  • TAMARIND SAUCE:
  • handful fresh basil (or substitute fresh coriander)
  • 2 Tbsp. sherry
  • 1 tsp. cornstarch powder dissolved in 3 Tbsp. soy sauce
  • + 6 more ingredients
    • 1-2 fresh red or green chilies, or ¼ to ¾ tsp. chili flakes (¼ tsp. = mild)
    • 3-4 cloves garlic, minced
    • 2 thumb-size pieces galangal or ginger, sliced into matchstick-like pieces
    • ¼ cup chopped shallots or purple onion
    • 6-8 fresh shiitake mushrooms, sliced, or your own choice of mushrooms to equal 1-2 cups
    • 4 chicken thighs, OR 2 chicken breasts, sliced into bite-size pieces
