Twice-Fried Chicken with Sriracha Honey


  • 1 teaspoon chipotle powder
  • 3 tablespoons Sriracha
  • 1 teaspoon smoked paprika
  • Kosher salt
  • 3 tablespoons honey
  • 1 ½ cups instant flour, such as Wondra
  • 1 tablespoon coriander seeds, toasted and cracked
  • + 2 more ingredients
    • 2 tablespoons seafood seasoning, such as Old Bay
    • Lard, for frying

In a small bowl, combine the seafood seasoning, coriander seeds, chipotle powder, paprika and a generous pinch of salt and mix well.
