White Bean and Orzo Salad with Shrimp

Ingredients

  • ¼ cup fat-skimmed chicken broth
  • 1/3 cup chopped fresh mint leaves
  • Salt
  • ½ pound shelled cooked tiny shrimp, rinsed and drained
  • ¼ cup chopped parsley
  • 1 ½ cups chopped onions
  • ½ pound dried orzo pasta (1 1/4 cups)

    • 2 cups rinsed and halved cherry tomatoes
    • 1/3 cup lemon juice
