Baked N'awlins-style barbecued drumettes

Ingredients

  • ½ t kosher salt
  • ½ t onion powder
  • ½ t garlic powder
  • 2 t dried chives
  • ½ t freshly ground black pepper
  • 2 t apple cider vinegar
  • 1 c sour cream
  • + 22 more ingredients
    • Dipping sauce ingredients:
    • 6 T unsalted butter, chilled
    • ¼ t dried thyme
    • ¼ t kosher salt
    • ½ t dried oregano
    • ½ t cayenne
    • 1 t garlic powder
    • 2 t paprika
    • 1 T freshly ground black pepper
    • 1 ½ T hot sauce
    • ¼ c dry white wine
    • ¼ c freshly squeezed lemon juice
    • 1 c Worcestershire sauce
    • 1 c water
    • 4 green onions, green and white parts separated
    • 5 clove garlic, minced
    • 6 T extra virgin olive oil, in all
    • "Barbecue" sauce ingredients:
    • Cooking spray
    • 40 chicken drumettes (about 6 pounds)
    • Water (for steaming)
    • Apple cider vinegar (for steaming)
