Barbecue Chicken Pizza with Grilled Pineapple and Speck


  • 8 oz smoked gouda, shredded
  • 1 handful fresh cilantro, chopped
  • 4 oz mozzarella cheese, shredded
  • 4 oz speck, sliced deli-thin and torn into pieces*
  • 1 pineapple, cored and cut into ½-inch slices
  • 2 boneless, skinless chicken breasts
  • ½ tsp fresh ground black pepper
  • + 3 more ingredients
    • 1 cup barbecue sauce, divided, plus more for serving (I used Stubbs spicy)
    • Olive oil
    • Your favorite pizza dough recipe, enough for 1 large pizza
