Bollywood Chutney Chicken Pizza

  • 1 teaspoon garam masala
  • 1 ripe mango, peeled, pitted, and diced
  • 1 ball prepared pizza dough, at room temperature
  • 2 tablespoons peeled and grated fresh ginger
  • 2 teaspoons kosher salt
  • ¾ cup plain full-fat yogurt
  • Juice of 1 lemon
  • + 11 more ingredients
    • 2 boneless, skinless chicken breast halves (1 pound total)
    • 2 tablespoons olive oil
    • Leaves from 3 sprigs fresh mint
    • ¼ cup uncooked grits or polenta, for rolling the dough
    • ½ cup grated smoked mozzarella cheese
    • 2 cloves garlic, minced
    • 1 cup mango chutney (Major Grey’s)
    • 1 medium white onion, thinly sliced
    • ¼ teaspoon red pepper flakes
    • 1 teaspoon cracked coriander seeds
    • 1 teaspoon turmeric

In a large bowl, combine the yogurt, garam masala, coriander, half the onion, the ginger, garlic, lemon juice, salt, and turmeric. Add the chicken and stir to coat. Cover and refrigerate for 2 hours.
