  • Cilantro sprigs (optional)
  • 4 teaspoons fat-free sour cream
  • Cooking spray
  • 2 jalapeño peppers, sliced
  • 3 (8-inch) fat-free flour tortillas
  • 2 tablespoons extravirgin olive oil
  • ½ teaspoon salt
  • + 9 more ingredients
    • ¼ teaspoon freshly ground black pepper
    • 6 tablespoons (3 ounces) crumbled soft goat cheese
    • 2 tablespoons chopped cilantro
    • 1 medium onion, cut into 1/4-inch slices
    • 1 tablespoon chopped fresh cilantro
    • 1 (6-ounce) skinless, boneless chicken breast half
    • Lime wedges (optional)
    • ½ cup fat-free, less-sodium chicken broth
    • 2 tablespoons fresh lime juice

Combine first 5 ingredients in a blender or food processor; process until smooth. Place chicken in a zip-top plastic bag. Add broth mixture.
