Ingredients

  • ½ cup natural peanut butter
  • 1/3 cup shredded sweetened coconut
  • 3 tablespoons vegetable oil
  • 2 garlic cloves, minced
  • 1/3 cup chopped fresh ginger
  • 2 tablespoons rice vinegar
  • 4 large boneless, skinless chicken breast halves (1 1/2 to 2 lb.)

    • ¼ teaspoon salt
    • The peanut sauce:
    • ¼ teaspoon crushed red pepper flakes
    • ½ cup soy sauce
    • 1/3 cup minced fresh chives
