Chicken Satay with Peanut Sauce
Ingredients
- ¼ teaspoon crushed red pepper flakes
- ½ cup natural peanut butter
- 1/3 cup shredded sweetened coconut
- 2 garlic cloves, minced
- 4 large boneless, skinless chicken breast halves (1 1/2 to 2 lb.)
- 2 tablespoons rice vinegar
- 3 tablespoons vegetable oil
