Ingredients

  • ½ cup water
  • 2 teaspoons white wine vinegar
  • 1 tablespoon extravirgin olive oil
  • 2 (1 1/2-ounce) slices white bread
  • Mint sauce:
  • 2 garlic cloves, minced
  • 1 pound skinless, boneless chicken breast, cut into 1-inch pieces
  • + 10 more ingredients
    • 2 garlic cloves, minced
    • ½ teaspoon salt
    • ¼ teaspoon crushed black peppercorns
    • ½ teaspoon salt
    • ¼ teaspoon crushed red pepper
    • 1 teaspoon olive oil
    • Cooking spray
    • ¾ cup packed fresh mint leaves (about 3/4 ounce)
    • Chicken:
    • 2 tablespoons fresh lemon juice

To prepare chicken, combine first 6 ingredients in a large zip-top plastic bag. Add chicken; seal and marinate in refrigerator 15 minutes, turning bag occasionally.
